1 (10-oz.) can Rotel Chopped tomatoes, for topping

In a large skillet over medium heat, add sausage and cook, breaking up meat with a wooden spoon, until no longer pink, 6 minutes. Drain fat. Return meat to skillet and add cream cheese, cheddar, and Rotel. Cook until melted, 5 minutes. Top with tomatoes and parsley. Serve warm with chips.
